Eggs and Spinach on Toast

Eggs and Spinach on ToastThis is one of my favorite weekend breakfast meals.  It’s delicious, pretty easy to make and quite healthy.  It’s ideal for after you go to Costco and you have good cheese and bread.  Here are the ingredients:

From IherbFresh Ground Black Pepper, Basil

From the Organic Box (Wwoof CSA), Costco, or the regular supermarket: Cheddar cheese, good bread (add on with the organic box), eggs, garlic, onion, spinach, salt, oil

It will take about 15 minutes to make.  Toast the bread and put the piece of cheese on top.  Fry up the onion and garlic in a bit of oil.  Add the spinach, salt, pepper and basil and cook until the spinach is just wilted.  Put on top of the toast and then fry up an egg or two (I like mine easy-over).  Enjoy with your hands if brave, or a fork and knife it not!

 

Bok Choi and Eggs

photoOne of the simplest, but most delicious and healthy meals that I make.  If you put the rice on to cook ahead of time, then the rest of the prep and cooking should take you under 10 minutes.  Perfect for that busy day at work and school when you get home hungry.  Here are the ingredients:

From Iherb:

Fresh Ground Pepper

From the regular supermarket or the organic box:

Bok Choi, eggs, garlic, rice, salt, oil.

It’s really simple.  Just fry up the garlic in a bit of oil.  Add the bok choi, salt and pepper and cook for 30 seconds, or until just wilted.  Don’t overcook.  Put over the rice and then fry up an egg or two (add some salt and pepper).  I like mine over-easy, but up to you.  Delicious!

 

 

Fried Rice, Fusion Style

Whenever I have some leftover rice, I’ll be sure to put it in the fridge for a day or two and then I’ll make up some fried rice.  It’s ideal for taking in your lunch because it’s equally delicious, cold or hot.  Here are the ingredients:

Iherb: 

Pepper, freshly ground, Crushed Red Pepper Flakes

Organic Box:

Perilla leaves, Mallow, Onion, Carrot, eggs

From the regular supermarket:

Sugar, Salt, Soy Sauce, Canola Oil Sesame Oil, Garlic, Green Onions, rice

After that, it’s really easy.  Just fry up the veggies in a bit of canola oil, starting with the ones that take longer to cook (ie: carrot).  Pull your veggies away from the center of the pan, and scramble up the eggs.  Add the rice and spices (salt/pepper/red pepper).  Let your rice get heated through, as you mix everything up.  Finally, add the sauce (sugar/soy sauce/sesame oil) and green onions and turn off the heat.

Tips:

1. Use old rice.  Fresh is too soggy

2. Make sure your egg gets cooked thoroughly before you add the rice or it will be soggy

3. You can add any veggies you want, the only mandatory ones (in my opinion) are green onion and garlic.

4.  Add lots of salt and pepper and garlic for extra deliciousness.

5. Cut out the red pepper flakes if you don’t like spicy

Beans and Rice

Beans and Rice is my go-to meal for lunch or dinner on the go.  On Monday and Tuesday, I quite literally spend 12 hours at work and because I generally try to avoid restaurants for health and financial reasons, I’ll use make up a big pot of beans on Saturday or Sunday so I can eat healthy at work.  Here’s how I do it:

Get yourself some Kidney Beans or Black Beans from the most fabulous Iherb.  Soak them overnight and then the next day, boil them for about an hour, until soft.  Then, in a separate pot, fry up some onion and garlic and whatever other veggies you want (peppers or zucchini work well), add the spices (salt/pepper/chili powder, etc), a can of canned tomatoes and the beans.  Boil together for 15 or 20 minutes.

Serve other rice and you can put some cheese, sour cream or salsa on top.  It’s delicious cold as well as hot.
