Beans and Rice


Beans and Rice is my go-to meal for lunch or dinner on the go.  On Monday and Tuesday, I quite literally spend 12 hours at work and because I generally try to avoid restaurants for health and financial reasons, I’ll use make up a big pot of beans on Saturday or Sunday so I can eat healthy at work.  Here’s how I do it:

Get yourself some Kidney Beans or Black Beans from the most fabulous Iherb.  Soak them overnight and then the next day, boil them for about an hour, until soft.  Then, in a separate pot, fry up some onion and garlic and whatever other veggies you want (peppers or zucchini work well), add the spices (salt/pepper/chili powder, etc), a can of canned tomatoes and the beans.  Boil together for 15 or 20 minutes.

Serve other rice and you can put some cheese, sour cream or salsa on top.  It’s delicious cold as well as hot.
